It's What's For Breakfast

I don't know what is going on out there, but suddenly it seems as if everywhere I look someone is talking about soft boiled eggs.  The book I was reading, popping up in my pinterest feed, a blog post I read.  It's as if the universe was trying to tell me something.  Being the big pushover for the power of suggestion that I apparently am - I soon found myself craving this dish. 

I'm a big fan of a good egg.  (I still mourn the loss of my own fresh, homegrown supply of them)  While a slimey undercooked white grosses me out a little, I do love a runny yolk.  So, soft boiled seems like a no brainer.  Right?  Why am I not eating more of these?

It was settled.  Soft boiled eggs on toast it was!



Delicious!  And it couldn't be simpler.  (well, ok - it probably could.  But this was still pretty easy)

  • Put about 3 to 4 inches of water in a small sauce pan
  • Bring to a boil, then reduce to a simmer.
  • Add eggs.
  • Boil (simmer) for 6 minutes
  • Remove eggs to an ice bath.  Let them soak for several minutes.
  • Peel eggs. (or just peel the top off and scoop out with a spoon or some of that toast)
  • Crack whites open over a slice of toast so that the runny golden yummyness runs out.
  • Consume and delight.
See, simple - right?   Kind of makes me want to invest in a few egg cups, as I see this becoming part of my regular breakfasts rotation.

What Made Me Laugh

I was making one of my favorite meals - Brinner (aka: breakfast for dinner)  While cooking up the eggs, one had a big bubble on it, so I tried to pop it with the spatula.  This was the result...

Ok... it clearly doesn't take much to amuse me....

NOT A Hard Boiled Egg

Perhaps someone did it on purpose because they thought it would be funny. 

Or maybe the carton currently being filled was topped out and someone was just too lazy to get out another one, so they just found the first carton with an empty space and use it. 

Maybe someone just didn't care which was the freshest, currently being filled carton and just grabbed one and stuck an egg into it. 

Whatever the circumstances were, they led to this.

This morning, I pulled out my stash of hard boiled eggs to shell a couple of them for my breakfast.  The first one cracked as usual and peeled easily.  The second cracked easily - and began to seep raw egg all over my fingers and the napkin I was peeling over.  That was NOT a hard boiled egg. 

To say the least - it took me by surprise.  To be more accurate, I was frustrated and annoyed due to a) the waste of a perfectly good egg, and b) having to clean up the mess.

Beginning to Feel Better

After I posted about losing The Girls last night, the neighbor that owns the dog came over to talk to The Man of the House.  He apologized several times.  He used to have chickens himself, so he understood how it feels to lose one or more. 

He paid us for the lost birds.  And is going to put in invisible fencing to keep his dog in the yard.  He even said if we wanted to try to call him when we were going to let them out to free roam for a while he will put her up in the house; because he knows once a dog has had the sport of getting a chicken it will keep coming back for more.  I suppose it was the best possible ending to a difficult situation. 

The Man of the House also spoke with our "chicken supplier" today, and we are going to be able to get 3 more birds of the same age at a reasonable cost.  I hope they are as fun to watch and lay as well as the ones we lost.
